Beer Brats (Kev-O style)

Now Kevin made these beer brats along with his Red Beans & Rice for the 2012 NFC Championship game, in which somehow the Niners snuck into the Super Bowl, awesome!
Usually i try to eat Paleo when I’m trying to be disciplined and totally CAVED to try these, it was WORTH IT! these are great – A MUST to go with the Red Beans & Rice
Ingredients:

  • Brats
  • Buns (usually the bigger rolls from like safeway instead of just hot dog buns)
  • onions (probably about 1 or 2 depending on how many you’re making)
  • beer (good strong-tasting IPA)
  • ketchup
  • stone mustard
  • Saurkraut (optional)
  • Carway seed (optional)

Crispier Brats:

Put the brats in a pot or saucepan and add enough beer to completely cover them. Then throw in about 3/4 of a sliced onion. Heat to boil then reduce to a simmer for about an hour to an hour and a half.

Put the brats on the grill (low/med-med heat) just for a few minutes to get a good charred crisp on the outside.

Put the brats back into a saucepan or crockpot with about an inch and a half of the beer/onion mixture on the bottom; low heat and covered. This will keep the flavor and keep them moist but you’ll still have a good crispiness on the outside.

Jucier Brats:

Put the brats on the grill first then put them in the crockpot or saucepan (low heat), fully submerged in the beer and onions. This way is really quick and easy: you can just throw em on the grill for a few minutes, put em in the crockpot and kind of forget about it. They’ll be ready in an hour to an hour and a half. They’re a little jucier this way but the crisp on the outside  boils off a little.

Saurkraut (optional):

I love saurkraut with my brats, but it’s not for everybody.

Take a jar of saurkraut (anything is fine; I buy the big one from safeway) and dump it into a saucepan. Add half a chopped onion and carway seed to taste. I don’t know exactly how much I add, but it’s hard to overdo it. I’d guess I put in maybe 3-4 tablespoons or so. Cook on medium heat, stirring occasionally, until the onions are soft. The carway should give it a nice punchy-sour taste.
