Mint Chip Truffles

Gluten free dairy free Mint Chip Truffles based on a delightful recipe from Practical Paleo.

Practical Paleo. You may have gotten your hands on a copy of this recently released book which looks bound for the New York Times Bestseller List. I did last week and was mighty pleased. Not only is it a wonderful Paleo cookbook, it is a practical guide to dealing with various health conditions, and more.

Admittedly, I have not read the book cover to cover, I have merely perused. However, I liked what I saw and want to share my version of one recipe that caught my eye, Chocolate Mint Truffles. They’re easy to make and full of something I’m trying to eat more of everyday: coconut oil.

Here’s my version of Diane Sanfilippo’s Paleo dessert.

Practical Paleo: Mint Chip Truffles

2 tablespoons coconut oil

3 tablespoons coconut butter or coconut manna (cream concentrate)

2 tablespoons macadamia nut butter

5 drops vanilla crème stevia

1 teaspoon honey

1 teaspoon mint extract

pinch celtic sea salt

1 tablespoon dark chocolate chips, chopped

Combine coconut oil, coconut butter and macadamia nut butter in a Vitamix

Pulse in stevia, honey, mint and salt

Transfer mixture to a small bowl

Stir in chocolate

Refrigerate bowl for 10-15 minutes

Scoop mixture into paper lined mini muffin cups

Refrigerate and serve chilled

Makes 6 truffles

When I scooped the mixture into the muffin cups I used a 1 tablespoon ice cream scoop which came in very handy. If you want to make a solid truffle (that is flat and not domed on top) then don’t refrigerate the mixture, simply transfer the liquified concoction into the paper lined mini muffin cups and chill to harden.
