Paleo Chicken Salad

There’s a little diner near me that puts raisins into their chicken salad, and it’s absolutely delicious! But did you know dried fruit has as much sugar as hard candy?! That’s why it’s not recommended to eat dried fruit on paleo (or too much fruit in general if you’re trying to lose weight, because remember, no matter what form it arrives in, sugar is sugar). So when I set out to make chicken salad this morning, I remembered a buddy told me Whole Foods had organic champagne grapes for sale.
I thought they could be a perfect paleo substitute for raisins! So into the mix they went!
All Ingredients, All Organic, All the Time:
Pasture raised chicken breast meat (I like boiled chicken for chicken salad because of the texture and how well it shreds. Roasted or grilled chicken for things like caesar salads though)
Homemade Mayo
Shredded Carrot
Shredded Celery
Shredded Red Onion
Champagne Grapes
Dry Thyme
Dry Rosemary
Dry Sage
Dry Dill
Garlic Powder
Red Pepper Flakes (I need a kick in everything I eat)
Black Pepper
The grapes add sweet, and the spices add savory, plus the grapes added some extra moisture, whereas raisins add none. Great flavor combinations going on! Substitute champagne grapes for raisins in your next paleo recipe!
