Sweet Potato Cakes

- 8 Sweet potatoes peel and rough chop
- 2 whole eggs
- Salt
- Black pepper
- Olive oil
Steps
- Steam your sweet potatoes until fork tender.
- Then cool your potatoes accordingly at room temperature about 15 minutes then cool in refrigerator. overnight for best results.
- Next day mash your potatoes with your whole eggs.
- Using a scooper, scoop the mash and place on a sheet pan lined with parchment and oil then refrigerate over night again.
- Bake at 375 for 20-25 minutes, allow to cool and serve at room temperature.
