Brussels Sprouts Salad

Ingredients
- 1 cup shaved brussels sprouts
- 1/4 cup diced Fuji apples
- 1 1/2 Tablespoons crushed, toasted hazelnuts
- 1 Tablespoon grated Pecorino Romano
- 1 1/2 ounce White Balsamic Vinaigrette*
* Note that recipe below is for a very large batch 5 plus cups of this dressing. Scale it down for a smaller batch.
- Vinaigrette:
- 1 cup Golden balsamic vinegar
- 4 Tablespoons Honey
- 4 cups blended oil
- 1/2 cup lemon juice
- 1 teaspoon sea salt
Procedures
- Combine brussels sprouts, apple, hazelnuts and Romano with vinaigrette.
- To prepare vinaigrette: Add all ingredients except oil in blender and blend to combine. Add oil in slow steady stream while blender is running to emulsify.
