Mango Chicken

Ingredients
- 6 boneless skinless chicken breasts
- 1 can mango pulp
- 4 cloves garlic
- 1 medium shallot
- 1 teaspoon smoked paprika
- 1/2 cup extra virgin olive oil
- sea salt to taste
- black pepper to taste
Procedures
- Preheat grill or oven broiler.
- Place mango pulp pulp, garlic, shallots and paprika in a blender and blend until combined.
- Blend until smooth and while mixing stream the oil into the blender. When fully incorporated place in a medium pot and bring to a boil on medium high heat.
- Taste and add salt and black pepper accordingly.
- Toss chicken breasts in olive oil salt and pepper. Grill or broil breasts until done, about 15 minutes.
- Remove chicken and let rest for 5 minutes. Slice chicken, and cover with the sauce.
