chicken noodle soup

Ingredient List

  • 1 pound boneless skinless chicken breast, roasted & diced
  • 1 gallon chicken stock
  • 1 onion, diced small
  • 1 carrot, diced small
  • 3 celery stalks, small
  • 2 garlic cloves, minced
  • 1 gallon chicken stock
  • 1 cup elbow macaroni
  • 1/2 bunch thyme, minced
  • 1/2 bunch oregano, minced

Procedures

  1. In a large heavy bottomed pot sauté onions on medium heat until translucent.
  2. Add fresh herbs and celery and sauté 3 minutes.
  3. Add carrots and sauté an additional 3 minutes.
  4. Add bay leaf and chicken stock.
  5. Reduce heat to low, cover and simmer for 30-45 minutes
  6. Add the elbow macaroni and cooked chicken and cook until pasta is al dente, about 10-12 minutes.
  7. Season with salt and pepper.
