Potato cheddar leek soup

- 5 pounds yukon gold potatoes, diced small
- 2 pounds leeks, cut into half moon
- 1 pound yellow onions, diced small
- 3 cloves garlic, minced
- 1 cup half and half
- 1 cup whole milk
- 1 pound cheddar cheese, shredded
- 4 Tablespoons unsalted butter
Procedures
- Steam potatoes in a medium pot inside a strainer. Steam for 15-20 min or until potatoes are soft.
- In a medium stock pot, sauté leeks, garlic, and onions together until onions are translucent.
- Add milk and half and half and simmer for 10 min.
- Add butter and potatoes, stir briefly.
- Blend soup in a blender (or immersion blender) slowly adding in cheddar until smooth.
