Paleo Mayo

1 egg
1/4 tsp mustard powder
1 tbs lemon juice
1 cup oil (any paleo oil will do, but I like plain olive oil, as opposed to extra virgin, for it’s neutral flavor)
In the blender on the slowest speed possible, mix the egg, mustard and lemon juice on low, as you slowly add in the oil from the top. This is called emulsifying (blending ingredients that normally don’t want to be together). When the oil is gone, it should be thick and creamy. Keeps in the fridge for 1-2 weeks.
