Ingredients
  • 1½ oz. Pimm’s No. 1 $0.63
  • ¾ cup ginger ale $0.12
  • 3-4 thin slices of cucumber $0.09
  • 2-3 thin slices of lemon $0.13

Instructions
  1. Wash the cucumber and lemon to remove any waxes on the skin. Thinly slice each into rounds.
  2. Fill a glass about ¾ full with ice. Pour the Pimm’s No. 1 over the ice and top off with ginger ale. Place 3 to 4 slices of cucumber down into the drink along with 2 to 3 slices of lemon.
  3. Sip the drink slowly (preferably on a porch while watching the world go by) to allow time for the cucumber and lemon to infuse into the drink. Enjoy life.

If you can’t find Pimm’s No. 1, try this drink with plain Gin or Vodka… or even lemon flavored vodka!

Pimm's CupNOTE: One bottle of Pimm’s No. 1 cost me $14.99 and is enough to make 16 cocktails, assuming you use 1.5 oz. per drink (I know, I know, they usually get stronger as you go…). The great thing about liquor is that it stays good for a long time so even if you just make a few, the rest won’t be going to waste.

The excess cucumber and lemon will probably only be good for about four days. You’ll probably get about four drinks out of each lemon and about eight drinks per cucumber. If you don’t plan on making eight drinks, just slice that cucumber up, sprinkle with a little salt and pepper and enjoy a healthy snack 🙂

Speaking of… my favorite part of the drink was eating the cucumber slices out of the glass after I was done. yummy!
