Mango Chicken

Ingredients

  • 6 boneless skinless chicken breasts
  • 1 can mango pulp
  • 4 cloves garlic
  • 1 medium shallot
  • 1 teaspoon smoked paprika
  • 1/2 cup extra virgin olive oil
  • sea salt to taste
  • black pepper to taste

Procedures

  • Preheat grill or oven broiler.
  • Place mango pulp pulp, garlic, shallots and paprika in a blender and blend until combined.
  • Blend until smooth and while mixing stream the oil into the blender. When fully incorporated place in a medium pot and bring to a boil on medium high heat.
  • Taste and add salt and black pepper accordingly.
  • Toss chicken breasts in olive oil salt and pepper. Grill or broil breasts until done, about 15 minutes.
  • Remove chicken and let rest for 5 minutes. Slice chicken, and cover with the sauce.
