Potato cheddar leek soup

Ingredients

  • 5 pounds yukon gold potatoes, diced small
  • 2 pounds leeks, cut into half moon
  • 1 pound yellow onions, diced small
  • 3 cloves garlic, minced
  • 1 cup half and half
  • 1 cup whole milk
  • 1 pound cheddar cheese, shredded
  • 4 Tablespoons unsalted butter

Procedures

  1. Steam potatoes in a medium pot inside a strainer. Steam for 15-20 min or until potatoes are soft.
  2. In a medium stock pot, sauté leeks, garlic, and onions together until onions are translucent.
  3. Add milk and half and half and simmer for 10 min.
  4. Add butter and potatoes, stir briefly.
  5. Blend soup in a blender (or immersion blender) slowly adding in cheddar until smooth.
