chicken noodle soup

- 1 pound boneless skinless chicken breast, roasted & diced
- 1 gallon chicken stock
- 1 onion, diced small
- 1 carrot, diced small
- 3 celery stalks, small
- 2 garlic cloves, minced
- 1 gallon chicken stock
- 1 cup elbow macaroni
- 1/2 bunch thyme, minced
- 1/2 bunch oregano, minced
Procedures
- In a large heavy bottomed pot sauté onions on medium heat until translucent.
- Add fresh herbs and celery and sauté 3 minutes.
- Add carrots and sauté an additional 3 minutes.
- Add bay leaf and chicken stock.
- Reduce heat to low, cover and simmer for 30-45 minutes
- Add the elbow macaroni and cooked chicken and cook until pasta is al dente, about 10-12 minutes.
- Season with salt and pepper.
