California Avocado Scramble

Ingredients
- 2Eggs
- ½ oz.Spinach Leaves
- 2Tomato Slices – Diced
- 1 oz.Red Onion – Diced
- ⅓Fresh California Avocado, diced
- 1 oz.Bell Pepper Mix
- 1 oz.Shredded Jack Cheese
Instructions
- Saute vegetables, except avocado in egg fry pan. Whip 2 eggs and pour on top of vegetables. Scramble eggs with vegetables. Cook until done, sprinkle with cheese and top with avocado. Place eggs at bottom center of large platter, side choice at top center, biscuit on right side and garnish on left side of platter.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
